The idea that I could throw a bunch of ingredients into a pot and they would cook all on their own is mind blowing. Honestly. Especially for a mom like me who is unfortunately NOT a wonder in the kitchen.

When I got my Instant Pot I looked for recipes to try and found this easy Arroz Caldo. This is inspired by Burnt Lumpia blog’s recipe which you can find here.

I didn’t follow everything to a T but I adapted what I knew my family would like. I left out the fried chicken skin bit because that is just way too sinful.

The verdict on this though is A+. The kids loved it! Prep time was only 10min or so, the pressure time was about 20min and actual cook time was 25min. Considering that the only real effort in all of it was the preparation and the rest of the time was just spent waiting.
