Summer calls for family bonding, cool refreshments and filling desserts. Our refrigerators get overworked with the kids always looking for something to eat and drink so we stock up and get a little bit more creative.

For a #PrimeSummer experience I searched for a couple of corn recipes I could make with a package of #MegaPrime Corn products I received. It’s the perfect alternative to the usual chocolate and sweet treats.

Corn Pudding


INGREDIENTS

  • 4 eggs room temperature
  • 1/3 cup melted butter
  • ¼ cup white sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cups milk
  • 4 tablespoons cornstarch
  • 1 can Mega Prime Whole Kernel Corn (drained)
  • 1 can Mega Prime Cream Style Corn

COOKING PROCEDURE

  1. Preheat oven to 200 degree C. Grease an 8-inch round pan.
  2. In a large bowl lightly beat eggs then add melted butter, sugar, vanilla and salt. Beat well and set aside.
  3. Pour milk in a separate bowl and add cornstarch. Whisk until cornstarch is dissolved then whisk in cornstarch mixture into the egg mixture. Stir in corn and creamed corn and mix well.
  4. Pour mixture into prepared baking pan and bake for 1 hour.

Corn and Buko Pandan with Sago Pearls


INGREDIENTS

  • 1 cup fresh coconut cream milk (gata)
  • 1/2 cup all-purpose cream
  • 1/2 cup confectioner’s sugar
  • 2 boxes gulaman (prepared according to directions) and sliced into cubes
  • 1/2 cup mini tapioca (sago)
  • 1 cup canned sweet corn kernels (drained well)

COOKING PROCEDURE

  1. Combine coconut milk, cream, and confectioners’ sugar in a large bowl. Mix until sugar dissolves.
  2. Add gulaman cubes and tapioca then fold gently.
  3. Gently fold corn kernels into the buko pandan mixture. Chill before serving.

What you need to prepare:

  • ¼ cup water
  • 1 pack plain gelatin
  • ½ cup condensed milk
  • ½ cup coconut cream
  • 1 can 425g cream style corn

5 easy steps to follow:

  1. In a pot, pour ¼ cup of water and one pack of plain gelatin. Mix well until the gelatin granules are dissolved.
  2. Heat the dissolved gelatin mixture and pour in the rest of the ingredients: ½ cup condensed milk, ½ cup coconut cream and 1 can 425g Mega Prime Cream Style Corn. Make sure that you and your kids wear pot gloves or use pot holders for safety purposes.
  3. Mix well and let it simmer.   
  4. Remove pot from the stove and let it cool.
  5. Pour mixture into ice pops maker and chill overnight.

Ajinomoto Sarsaya Oyster Sauce Recipes

One of my favorite go to simple dishes are veggies cooked in oyster sauce that’s why I’m always on the look out for oyster sauce recipes.

Ajinomoto Philippines Corporation organized a press conference to announce the launch of its newest product, Sarsaya® Oyster Sauce, and celebrity endorser, Mr. Coco Martin. Sarsaya® Oyster Sauce is concentrated from real oysters, complete with seasonings to provide a delicious blend of savory, sweet and salty taste to any dish.

According to Pen Alvina, Ajinomoto’s Category Manager for Menu Seasonings, “Sarsaya® Oyster Sauce is a unique brand of oyster sauce that is created to suit Filipino taste and preference, making many Filipino dishes like ginisang kangkong and adobo more flavorful and delicious.”

During the event, a live cooking demonstration and cook-off was facilitated by Chef Mcrhyan Rodrigo. Chef Mac cooked Filipino favorites Ginisarsayang Kangkong with Tokwa and his own recipe, Thai-style Stir Fried Chicken using Sarsaya® Oyster Sauce. Guests were also invited to participate in a cook-off, where they discovered the convenience of using Sarsaya® Oyster Sauce to turn ordinary dishes extra special and flavorful.

No less than the Primetime King, Mr. Coco Martin, was chosen to endorse Sarsaya® Oyster Sauce. Try these Everyday Recipes with Hunts Spaghetti Sauce

Even if the holidays are over, every day can still be a feast worth celebrating with dishes and masterpieces that not only delight families, but also help bring out and year-round cheer around the dinner table.

Crispy Menudo Lumpia

Make the crunchy fried lumpia dish even more delightful with this hearty filling.

Ingredients:
2 tbsps. cooking oil
5 cloves garlic, minced
1 red onion, minced
1/4 kg ground pork
250 g Hunts Spaghetti Sauce Pinoy Party Style
½ cup water
2 pcs. bay leaves
1 tbsp. soy sauce
1 carrot, diced
1 potato, diced
1 can liver spread
3 pcs hotdogs, diced
½ cup frozen green peas
Salt & pepper to taste
10-15 pcs. square lumpia wrappers
2 pcs. egg whites

Procedure:
Start off by sautéing garlic and onions. Add pork and cook until lightly browned. Add Hunts Spaghetti Sauce Pinoy Party Style, water, bay leaves and soy sauce, bringing it to a boil. Simmer, then add carrots and potatoes. Cook until liquid is mostly reduced. Mix in liver spread, hotdog and green peas, and cover for 2-3 minutes. Next, season with salt and pepper to taste, then set aside and let cool. Spoon 2 tbsps of menudo over one lumpia wrapper, roll, and secure the edges by brushing with egg whites. Finally, deep-fry until golden brown.

Seafood Lasagna Roll-ups

Make mealtimes truly memorable with this shrimp-layered and crab sauce-filled lasagna dish.

Ingredients:

Shrimp
– ¼ kg shrimp, peeled and deveined
– Salt and pepper to taste
– 1 tsp. paprika
– 1 tbsp. calamansi juice
– 2 tbsps. olive oil

White crab sauce
– 2 tbsps. butter
– 5 cloves garlic
– 1 white onion
– 2 cups cream
– 1 cup crab meat
– 2 tbsps. parsley, chopped
– 8-10 pcs lasagna noodles

Red sauce
– 2 tbsps. olive oil
– 1 red onion, chopped
– 5 cloves garlic, chopped
– 250 g Hunt’s Spaghetti Sauce Parmesan Cheese
– 2 tbsps. basil, chopped

Assembly
– 1 cup mozzarella cheese, grated
– 1 cup parmesan cheese, grated
– Basil leaves for garnish

Procedure: 
Start by seasoning shrimp with salt, pepper, paprika and calamansi juice. Cook shrimps in olive oil for 1-2 minutes on each side, butterfly-cut each shrimp and set aside. Meanwhile, add butter to the same pan where shrimp was cooked. Sauté onion and garlic, add the cream and simmer until thick. Mix in the crab meat, cook for about 5 minutes and season with salt and pepper. Turn off heat and mix in parsley. Set aside.

Next, sauté onion and garlic over medium heat. Add Hunts Spaghetti Sauce Parmesan Cheese, simmer until thick and season with salt and pepper. Turn off heat and mix in basil. Set aside. Finally, cook lasagna noodles according to package directions. Set aside.

To assemble, lay lasagna noodles flat on a large surface. Spread about 3 tbsps. of the white crab sauce on each and top with pieces of shrimp, while leaving an inch at the top of each lasagna noodle empty. Sprinkle mozzarella and parmesan cheese on top (about 1 tbsp. each). Roll each lasagna noodle while securing the filling inside. Spread half of red sauce at the bottom of baking dish. Place all the lasagna roll-ups on top of the sauce, seam-side down. Keep the lasagna roll-ups close to each other to prevent unraveling. Spoon-in the remaining red sauce. Top with more mozzarella and parmesan cheese and bake at 190C for 30 minutes. Garnish with basil leaves.
