The smell of coffee can permeate through a household, fill a cafe and is a familiar scent in any office. I remember making coffee for my dad when I was younger. I had specific measurements to follow and would brew it in a coffee pot.

Nowadays, coffee is bought in cafes but home brewed coffee still seems to be a favorite. Locally sourced coffee is also becoming a trend. More and more people are now going back to brewing at home and appreciating the fine art of coffee.

To support this movement, Robinsons Supermarket recently partnered with Silca Coffee to hold a simple coffee appreciation class at Robinsons Supermarket Ermita. Silca Coffee is a proud Filipino family-owned roasting company founded by Enrile M. Asuncion in 1996 based in Silang, Cavite. Since then, they’ve been harvesting, roasting and exporting coffee worldwide.

At the appreciation class, Michael Asuncion, President of Silca Coffee taught us how coffee was made from harvesting, drying to roasting. More importantly, we learned some of the best ways to prepare coffee at home.

Silca Coffee supplies freshly roasted Philippine and imported coffee to hotels, restaurants, coffee shops, food chains and major supermarkets. They offer Kick Start Coffee and Silcafe Brands.

I learned that not every cup of coffee is the same. There are different brewing techniques depending on the bean, process and brewing time. The types of green coffee are Arabicas, Robusta, and Excelsia/Liberica.

Coffee starts as green berries which have to be ripened then picked once they become coffee cherries. Approximately 8 cans (10kg/can) of coffee cherries can be picked per day. Coffee is then soured through a dry method which takes about 2 weeks. This is then delivered to the mill to be weighed and milled (removing the dried pulp and releasing the 2 green beans). Finally, the coffee is roasted (this unlocks the flavor and aroma that we enjoy)and packed. It’s no wonder coffee brewing is considered an art because of the lengthy process of producing the roast to measuring and crafting the perfect taste.

Coffee does have its benefits.

  • 5-10% lower risk of developing Type 2 Diabetes (6-8 cups a day)
  • Lower risk of coronary heart disease in women
