Breakfast has been said to be the most important meal of the day especially for kids. When you start your day with a good breakfast it gives you the energy your body needs to do well at work, school and play. Our breakfasts are pretty basic and I’ve been wanting to have better meals. When I was invited to the Nestle Breakfast Cookbook launch I was really excited to see what kind of breakfast variations I would be introduced to.

The launch of the “I Can’t Believe It’s Breakfast” cookbook by Nestlé Resident Chef Tess Sutilo features 30 easy-to-follow recipes that offer a variety of breakfast ideas from the very “quick” when you don’t haveh time to spare to the “not-so-quick” for mornings when you can invest a little more time and effort for the most important meal to jump start your day.

Breakfast has so many benefits a few of which are:

  • better performance
  • mental alertness
  • weight management

It was interesting to learn that when you skip breakfast your metabolism slows causing you to gain weight. So you should never miss breakfast! Usually you think that when you skip breakfast you’re skipping an unnecessary meal.

When a person sleeps their body goes into a fasting state. Stored energy for basic functions like breathing, cell repair and blood circulation are used while asleep. When a person wakes up their body restores energy by literally “breaking the fast” through the first meal of the day, breakfast.

When you skip breakfast your body recognizes the lack of food and goes into a “panic mode,” thinking that it is starving. The body’s metabolism slows down to conserve the energy that’s left to support the body processes and physical activities. A slow metabolism means the food you take in is stored as fat rather than burned as energy.

Benefits for kids include:

  • better engagement in class
  • better solving skills

Pair your breakfast with a mug of Milo!

To ensure a balanced breakfast your plate should have the following from these food groups:

  • Go Foods, or energy-giving food- includes bread, rice, noodles and root crops
  • Grow Foods, or body-building food- includes protein sources like meat, poultry, fish, beans and nuts
  • Glow Foods, or body-regulating food- includes fruits and vegetables
  • Healthy Beverages- water, milk, juices, tea, etc (such as a cold glass or a hot mug of creamy Milo!)

Chef Tess recreated a few of the dishes from the I Can’t Believe It’s Breakfast Cookbook. Indeed, the dishes are easy enough to make and unique that adults and kids alike will want to have breakfast everyday.

Tomato Red Egg Tocino Rice with Danggit Ensalada

Ingredients:

2 tbsp cooking oil
2 tbsp chopped garlic
1 onion, sliced
1 cup cooked tocino or left-over fried pork chop
2 red eggs, chopped
4 cups cooked rice
2 tomatoes, chopped
¼ cup chopped celery
1 8g sachet MAGGI MAGIC SARAP

Procedure:

1. Heat cooking oil. Stir in chopped garlic and onion. Cook until fragrant.
2. Stir in tocino and red eggs. Add rice. Stir until fully incorporated.
3. When almost cooked, add tomatoes and celery. Season with MAGGI MAGIC SARAP.
4. Continue cooking for another minute. Serve hot with more chopped tomatoes on top if desired.

For Danggit Ensalada:

Combine in a bowl:
5-6 pcs fried danggit, coarsely crushed
2 tomatoes, chopped
1 red onion, chopped
¼ cup vinegar
½ tsp pepper
1 tsp sugar
wansuy sprigs

Salad in Tomato Cups

1 250ml NESTLÉ All Purpose Cream
1 cup canned tuna, drained
1 cup mashed potato
4 basil leaves, chiffonade
¼ cup chopped celery
6 big salad tomatoes, halved, seeded to form a cup
1 cup bread crumbs seasoned with
1 tsp MAGGI MAGIC SARAP
½ cup quick-melting cheese

Procedure:

1. In a bowl, combine NESTLÉ All Purpose Cream, tuna, mashed potato, celery and basil. Combine mixture to fully incorporate.
2. Spoon tuna-potato mixture inside tomato cups. Sprinkle generously with seasoned bread crumbs.
3. Top with grated cheese. Broil tomatoes until cheese is melted.

Lemon Bell Pepper on Parmesan Toast

Ingredients:

juice of 1 lemon
¼ cup olive oil
¼ cup minced garlic
1-2 French bread, sliced into rounds
2 tbsp olive oil
1 red onion, sliced
1 red bell pepper, sliced thinly
1 yellow bell pepper, sliced thinly
1 8g sachet MAGGI MAGIC SARAP
½ cup grated Parmesan Cheese

Procedure:

1. Combine lemon juice, olive oil and garlic in a bowl. Mix until thoroughly incorporated. Brush each sliced French bread with the lemon-olive oil mixture. Set aside.
2. In a pan, heat 2 tbsp olive oil. Stir fry onions and peppers for 2 minutes keeping them crunchy and al dente.
3. Season with MAGGI MAGIC SARAP to taste. Top toasts with the onion and peppers mix. Sprinkle with grated Parmesan cheese.
